Instructions

  • 1. Preheat oven to 350F. Spread beans on a foil-lined baking sheet and bake 20 minutes.
  • 2. Heat 2 tablespoons oil in a skillet over medium-high heat. Cook onion and poblano until softened, about 5 minutes.
  • 3. Add garlic and continue to cook another 2 minutes. Add chipotle and sauce and cook another minute. Transfer to a large bowl.
  • 4. Pulse cashews in food processor, about 12 short pulses. Add to bowl with onion mixture.
  • 5. Pulse beans in food processor until roughly chopped and transfer to bowl with other ingredients.
  • 6. Add mayonnaise, egg, bread crumbs, salt and pepper and gently fold together.
  • 7. Form bean mixture into 6-8 patties and brush top side with oil.
  • 8. Grill oil-side down 3 to 5 minutes, brush oil on second side, carefully flip and cook another 3-5 minutes. Top with cheese if desired.
  • 9. Toast buns and serve with condiments of your choice.
