  • 1. Heat oil in pressure cooker on saute mode
  • 2. Add onion & cook 2 minutes, stirring frequently
  • 3. Add carrot, celery, bell pepper, cook another 2 minutes, continuing to stir frequently
  • 4. Add garlic, chipotle, spices, stir another 30 seconds
  • 5. Add stock & beans
  • 6. Secure lid & switch to manual high mode, 35 minutes
  • 7. Allow to naturally depressurize, 10 minutes
  • 8. Stir in vinegar & season with salt & pepper
  • 9. Remove 2 cups, blend & mix back in
