Instructions

  • 1. Preheat oven to 350˚F/180˚C.
  • 2. Heat oil in Dutch oven over medium-high heat. Add chicken and brown skin-side down 8 minutes and another 3 minutes on the second side. Reserve chicken to plate.
  • 3. Add sausage and brown about 1-1/2 minutes on each side.
  • 4. Transfer to cutting board and cut each link into 3-4 pieces.
  • 5. Add onion and bell pepper to pan, cook until starting to brown, about 4 minutes.
  • 6. Add sage and garlic and cook additional 1 minute.
  • 7. Stir in pickled peppers and deglaze pan with pickling juice.
  • 8. Add wine and cook until reduced by half, another 2 minutes.
  • 9. Add chicken stock and sugar, stirring to combine.
  • 10. Stir in sausage. Nestle chicken in sauce, skin side up.
  • 11. Transfer to oven and cook uncovered 30 minutes.
