  • 1. Combine cornstarch, flour, baking powder and salt in a bowl. Whisk in water to form a smooth batter.
  • 2. Heat oil in a large wok or Dutch oven to 350F.
  • 3. Dip tofu slices in batter and then carefully lower into oil one at a time. Fry, turning frequently to brown evenly, about 6 minutes. Remove to paper towel lined plate.
  • 4. Combine wine, stock, soy sauce, black bean sauce, sugar, sesame oil, lemon juice, and cornstarch in a small bowl.
  • 5. Heat a large wok or heavy skillet over high heat. Add broccoli and cook, stirring often until lightly charred. Add garlic, ginger, and scallions and stir constantly another 30 seconds. Transfer to a bowl.
