Instructions

  • 1. Heat salted water with vinegar in pot and bring to boil. Reduce heat to simmer and carefully lower eggs into water. Cover and barely simmer over low heat, 11 minutes.
  • 2. Drain water and immediately transfer eggs to a bowl of ice water to chill.
  • 3. Peel eggs and cut in half lengthwise. Using a small spoon, carefully scrape out the yolk and transfer to a small bowl.
  • 4. Add mayonnaise, mustard, a few dashes of hot sauce, salt, and pepper to the bowl and mix well.
  • 5. Place a hefty spoonful of the filling back into each egg.
  • 6. Garnish with a dash of paprika over each filled egg.
