Instructions

  • 1. Slice each potato in 1/4" slices longitudinally close to the bottom, but not all the way through. Chopsticks on either side can be used as guides to keep from slicing all the way through.
  • 2. Preheat oven to 400F.
  • 3. Melt 3 tablespoons of butter and mix with olive oil, sprinkle potatoes with salt and pepper then drizzle butter/oil mixture over each potato.
  • 4. Place the garlic slices in the slits of the potatoes.
  • 5. Place potatoes on baking sheet lined w/ parchment paper, bake 45-60 minutes.
  • 6. Top with sour cream and parsley.
