Instructions

  • 1. Peel plantains and cut into 1" slices.
  • 2. Heat 1" oil in heavy bottomed pan to 350F. Shallow fry plantain slices, 1-2 minutes per side until lightly browned.
  • 3. Transfer to paper towels to drain and allow to cool slightly.
  • 4. Using a paper bag, smash slides into 1/2" disks.
  • 5. Increase oil temperature to 375F. Fry again for 1-2 minutes per side.
  • 6. Transfer to paper towels to drain and season with salt immediately while still hot.
