Instructions

  • 1. Preheat oven to 400F.
  • 2. Cut zucchini in half lengthwise. Use a spoon to scrape out the center and create a hollow in each half. Place skin sides down in a greased casserole dish.
  • 3. Heat olive oil over medium heat in a large skillet. Add onion, jalapeno and bell pepper and cook until softened, about 3 minutes. Add corn, beans, salsa, and spices and continue cooking another 5 minutes.
  • 4. Spoon mixture into zucchini halves. Top with shredded cheese. Bake 20 minutes until cheese is melted and starting to brown.
